Easy to make, inexpensive and terribly delicious, this spinach and quinoa gratin should win everyone's hearts.

Ingredients for 4 persons :

  • 300 g of red quinoa
  • 250 g fresh spinach
  • 1 vegetable cube broth
  • 35 g semi-salted butter
  • 2 eggs
  • 100 g of faisselle
  • 10 cl of milk
  • 20 cl of liquid cream
  • 40 g grated Emmental
  • 2 pinches of nutmeg
  • Salt, freshly ground pepper

Spinach and Quinoa Gratin

- Preheat the oven to 180 ° C (th.6)

- In a saucepan, pour water and a vegetable bouillon cube.

Bring to a boil, salt and pour in the previously rinsed quinoa.

- Cook for about 15 minutes, then drain and set aside.

- In a frying pan, melt 25 g of butter and add the fresh spinach.

Cook for 2 minutes and mix with the quinoa.

- Season.

- In a salad bowl, whisk the eggs, milk, cream and faisselle.

Season with freshly ground pepper, salt and nutmeg.

- In a gratin dish, arrange the spinach and quinoa and cover with

egg-milk-cream-faisselle mixture, sprinkle with the remaining 10 g of butter and

grated Emmental.

- Bake for 20 to 25 minutes.

- Serve immediately.

- You can use frozen spinach, draining it well before cooking it in butter.

- This complete dish is interesting because of the protein qualities of quinoa and the lipid qualities of dairy products. It is also very suitable for vegetarians!

Quinoa: Round seed coming from America, it is often called the "rice of the Incas". Quinoa is a pseudo-cereal since it belongs to the chenopodiaceae family (same family as that of beets and spinach).

Quinoa is easy to digest, gluten free, but rich in minerals such as phosphorus, magnesium and iron, as well as vitamins.
